• Salmon fillet (I use frozen)
  • Rice (I used veetee thai jasmine *the BEST single serve sticky rice*)
  • 4 tenderstem broccoli stalks
  • 1 bok choi chopped up
  • Marinade ingredients – 2 tbsp soy sauce, 2 tbsp white rice vinegar, 1tsp gochugaru, 1tsp garlic paste
  • Optional toppings – 1/2 avocado and kimchi
  1. Coat salmon in marinade ingredients and leave for at least 15 min or even overnight
  2. If you’re not using microwave rice, prep and cook your rice now
  3. Cook the salmon in the air fryer for 10-12 min at 185
  4. Add the bok choi and broccoli to any left over marinade and cook in a frying pan for 2-4 min or longer for the broccoli only if you want it softer
  5. Add the rice to a bowl, top with the salmon, broccoli and bok choi
  6. I love to add some avocado and kimchi on top too
