It’s been a while since I posted any content here and an even longer while since I shared a recipe. With pancake day coming up it seemed only right to share my current go to recipe! 

Ingredients

  • 45g Flour (I use plain but any will do – buckwheat, oat etc)
  • 25g Protein powder
  • ¼ tsp baking powder
  • If going chocolaty I’d also add 5g cacao or cocoa!
  • 1 egg white (or flax egg)
  • Any milk OR water – around 150ml. Add bit by bit until you have a pretty thin consistency
  • Topping of choice! (I am all about banana, cherries and peanut butter at the moment)

Method

  1. It couldn’t be simpler! Mix all the dry together, add the egg and liquid
  2. Warm up a non stick pan on a low heat
  3. Use some spray oil before adding a few spoons of mixture. 
  4. Roll it around to coat the pan, then use a spatula to flip once you spot bubbles
  5. Keep going until you have a beautiful stack of deliciousness to top and enjoy

Nutrition

  • For just the pancakes (no toppings) made with chocolate whey it’s only 269kcal! You should make a good 5 of these too!
  • 34g carbs, 3g fat and 26g protein (gasp)
