*Disclaimer* I can’t say this is my most creative recipe HOWEVER, it is one of my most loved in 2024. When I say I had this almost every day I genuinely mean it. When I wasn’t sure what to have this was my quick, simple yet tasty well balanced lunch/ dinner.

What you will need (this is for 1 serving but I usually cook everything up and store in Tupperware ready to go):

  • Mince of choice – I usually use Turkey or chicken. 500g if batch cooking or 125-133g if making a single serving
  • Nando’s sauce – spice level of choice. Around 25ml but I free pour 🙂
  • 1/2 bag of microwave rice – As I usually make this at work I use a microwave pouch, usually wholegrain mixed with quinoa for fibre. If you’re cooking your own prep this before starting step 1 so it’s all ready to go
  • Salad is just tomatoes, cucumber and iceberg lettuce
  • Sauce is 15g nandos perinaise (I use mild because I can’t handle spice it seems) and 20g fat free greek yogurt 

 

How to make 

  1. Heat a pan and spray with some light oil
  2. Fry off the mince of choice as per cooking directions adding Nando’s sauce once browned
  3. While cooking chop cucumbers tomatoes and lettuce up and add to a bowl or tupperware if meal prepping. Add in perionase and greek yogurt and give a good mix until well combined 
  4. Dish up cooked mince (separate container to salad so you can heat later if prepping ahead). I add 1/2 pouch of microwave rice here too so it’s all ready to be heated at work that week. 
  5. Take the salad mix and mince/ rice mix to work. Heat. Combine, add some extra sea salt and enjoy.
